"Ethnic" barbecue catches fire among consumers

Ethnic barbecue is winning over customers this summer, according to a U.S. Foodservice survey. Ethnic barbecue, which includes Caribbean, Latin and Korean flavors, was the No. 1 trend for the summer, besting grilling, all-day breakfast and small-plate meals, the survey of restaurant chefs and customers found.
