Artisanal chocolate makers enter the fray

Newcomers to the chocolate-making industry are discovering the joys of artisanal chocolate. Tcho chocolate in San Francisco, set to open in the first quarter of next year, will have the capacity to produce three tons at a time. Some "micro-batch" producers are crafting 50 to 1,000 pounds at a time.
