Boosting produce consumption could bring $11 trillion reward

If every American followed the Agriculture Department's recommendations for fruit and vegetable intake it would cut $17 billion in health care costs and save 127,000 lives each year, according to a report from the Union of Concerned Scientists. The report, which calculates that total savings from healthier eating would total about $11 trillion, recommends the expansion of crop insurance to small fruit and vegetable growers to boost supplies.
