Chef shines spotlight on Puerto Rican cuisine

Puerto Rican chef and CIA graduate José Enrique was named one of Food & Wine's "Best New Chefs" in 2013 for his focus on authentic Puerto Rican fare made with local ingredients. "I try to use as many locally-sourced ingredients as possible so that the agricultural movement moves forward," he says in this interview. "Agriculture in Puerto Rico is just starting to grow again and I hope that as I start pushing for better ingredients, more chefs do too."
