Eating locally and globally in Hawaii

In Hawaii, kosher salt and pasta are considered "ethnic" foods, but not so for kimchi, miso and other foods representing the many cultures in the nation's most diverse state. Local food includes Korean barbecued ribs, raw fish known as poke, and loco moco, a breakfast containing rice, hamburger and gravy.
