Houston's proliferation of more than 1,000 ethnic specialty grocers, which sell foods from Asia, Latin America, Africa and the Middle East, mark a unique challenge for local food-safety officials, who note that just because a food is exotic, such as fried ants, doesn't mean that it is unsafe or contaminated.
