Kraft-backed study finds gel could replace trans-fats

Research backed by Kraft Foods found that a cellulosic gel could be used to replace trans fats in some food products. The research team, led by Tania Dey from Canada's University of Guelph, said the gel could be used to create a healthier shortening for use in baked goods.
