Hotels cater to celiacs with gluten-free menu options

Traveling is a little easier for people with celiac disease because hoteliers such as Fairmont Hotels & Resorts, Omni Hotels & Resorts and Ritz-Carlton are offering gluten-free menus or food options, and even Walt Disney Parks and Resorts is taking requests on a guest-by-guest basis. The challenge for hotels is making sure their kitchens do not allow cross-contamination with regular foods, and chefs are getting help ensuring their recipes are gluten-free using analysis software called Nutritionist Pro by Axxya Systems.
