Chad Ford, associate director of colors for WILD Flavors, said the company's juice-derived blue food coloring, available since 2009, is superior to the spirulina extract that recently won FDA approval. "WILD's acid-stable blue color can span the pH range of food and beverage products, is stable to light and is very stable to heat," he said.
