Yellowstone chef champions sustainability

Jim Chapman, executive chef at Yellowstone National Park, has brought local and sustainable ingredients to the park's nine dining rooms since he started in 2004. The CIA alum says bison tenderloin is the top-selling dish at the park's fanciest dining room, at the Lake Yellowstone Hotel.
