CIA graduate and 2010 "Chef of the Year" Michael Matarazzo leads two kitchens at the Bear Mountain Inn in Highland Falls, N.Y., where his focus is on healthy, sustainable living. Light dishes such as fresh seafood ceviche and small plates of sausage are served at the Blue Roof Tapas Bar while Restaurant 1915 showcases Matarazzo's formal dinners.
