Clean-label demand poses opportunities and challenges, experts say

Experts at the Institute of Food Technologists' annual meeting discussed drivers behind cleaner labeling and challenges that come with developing food and beverage products, such as consumer perception, regulation and easy-to-understand description. Campbell Soup has ended the 100% Natural line, which did not meet expectations, partly because label requirements limited flavor opportunities, said Mark Alexander, president of the North American unit.
