Scandinavian cuisine makes its mark on the NYC food scene

Scandinavian restaurants are popping up on the New York City food scene, moving into the territory first tread by Manhattan's Aquavit restaurant. The city's first Nordic Food Festival, NORTH, will be held in early October, and chef Marcus Samuelsson hopes Scandinavian food will soon become a staple in the U.S. diet. "Trends come and go, but if it's good quality and the technique and products are great, people start to incorporate it in their food. The food of Scandinavia has a point of view and it has always been unique," Samuelsson said.
