Eateries find a way to make global menus work

Two new chef-driven restaurants slated to open in northern New Jersey later this fall have devised global menus that are influenced by a wide range of international cuisines. Orama founder John Piliouras said chain restaurants are leading the way when it comes to offering more choices without sacrificing quality. "They really, to a certain degree, know the difference [between] when something is a fad and when it becomes a trend. … I think sometimes as private restaurateurs, we should pay attention to what companies that spend a lot on marketing are doing. And just do it your own way. Do it at maybe a higher level."
