Scientists get to the root of natural food colors

The vibrancy and range of colors from purple sweet potatoes provide compelling opportunities to replace artificial colors with natural ones, according to food chemist Stephen Talcott. Another root vegetable, black carrot, is also being grown specifically for its natural color potential.
