Taiwanese bubble tea is being poured on just about every continent but the small, bouncy tapioca pearls, or "bubbles," are extremely difficult to make, as food writer Tim Carman recently discovered. After a few hits and misses, Carman finally found the right tapioca pearls that, when cooked using proper technique, added a sweet, chewy element to his oolong tea.
