Ice on the roads? Just say cheese

Wisconsin will run a pilot project using cheese brine, a waste product from the cheesemaking industry, to salt its roads during wintery weather as a potentially less road-damaging alternative to using only rock salt. That's an innovative use of dairy waste, and something other states should learn from, writes Emma Roller. "[W]hy not encourage other states to find creative ways to make use of their most abundant resources?" she writes.
