School meal programs require more than cooking skills

School nutrition professionals at a Minnesota high school do much more than cook school meals. Besides designing a plan within budget, they begin planning menus two months before the beginning of a new school year. They also work to meet federal meal requirements by creating food charts and color coding different food groups to help students choose items as they go through the lunch line.
