Barbecue, street food are stars of Uruguay's food scene

Uruguay's cuisine is a melting pot of Spanish and Italian flavors sprinkled with some indigenous components. Chef Ignacio Mattos encourages visitors to his native country to attend an all-day barbecue that uses the entire animal or search for the best street food sandwich, the chivito, which layers thinly sliced steak with bacon, cheese, onions and tomatoes.
