As fall approaches, mushrooms have their moment

September's cooler air introduces flourishing porcini and chanterelle mushrooms -- the best part of fall according to chef Norbert Niederkofler of Restaurant St. Hubertus in San Cassiano, Italy. Niederkofler puts the mushrooms in oil or freezes them for the winter or uses them fresh in risotto, pasta or carpaccio.
