Restaurant chains target affluent, nutrition-conscious diners

Restaurant chains are looking for affluent, well-educated diners, banking on the belief that these customers are looking for healthful menu items and will remain loyal to establishments that offer them. "More than half of the fast-casual and upscale-casual-dining chains are chasing educated, middle-class and up, white-collar-employed consumers," former Applebee's marketing executive Bill McClave says.
