Greek yogurt turns attention on natural colors

The rising popularity of Greek yogurt and all-natural foods has turned consumers' attention to natural colorants, global sales of which outpaced those of artificial colors for the first time in 2011. "It's of my opinion that natural colors will overtake synthetics in five to 10 years," said Tim Truby, vice president of food and color technology at Wild Flavors.
