How pizza became the next fast-casual frontier

Restaurant industry veterans from the founders of Wetzel's Pretzels to the former president of Moe's Southwest Grill have created fast-casual pizza concepts, all with the goal of becoming the industry leader. "Everybody's saying this is the Chipotle of pizza. I’m really getting tired of that," Randy Grier, CEO of Pie Five parent Pizza Inn Holdings, said with a laugh. "But I think it's a reference that maybe helps consumers understand the concept."
