Chicago's "clamwich" gets raves

After getting a good response to the surf clam at his FishGuy Market in Chicago, Bill Dugan decided to use the clam to make an affordable "clamwich," which he now sells on his takeout menu. The sushi-grade clam is breaded, pan-fried, dressed with herb mayonnaise and greens and served on a hamburger roll.
