Bluefin tuna used to be popular only in sport fishing events where it was later trashed, but Japanese sushi makers slowly began incorporating the large fish into their offerings over the past century. Now, bluefin tuna's tangy flavor is a hallmark of Japanese cuisine and is in demand among chefs worldwide.
