Can your eatery meet new gluten-free standards?

The Food and Drug Administration's ruling issued last month lays out four criteria foods must meet to be labeled gluten-free, and it will take commitment, effort and training for restaurants to live up to the new standards, says Healthy Dining Finder's Anita Jones-Mueller, who offers advice on complying with the new rules. "It is not too early -- or too late -- for restaurants to begin to put a plan in place to meet the growing and varied nutrition needs of their guests. That is the 'wave of the future,'" she said.
