Jersey childhood flavors chef's NYC menus

Chef Bill Telepan grew up scarfing onion rings from the diner, pizza slices at the Jersey shore and his mother's Eastern European cooking at home, all of which color the cuisine offerings at his namesake New York City eatery. The lunch menu includes a burger with a "volcano" of molten crunch. "It's an onion-ring mountain with French-fry lava. That’s the Jersey in me," he said.
