Some lemons, limes are worth preserving

Sweet, less acidic and thinner-skinned than their grocery-store counterparts, Mexican limes are worth preserving. A recipe for Moroccan preserved lemons works just as well with limes, yielding a delicious addition to vegetables, salads and fish or chicken dishes. The recipes calls for six limes or lemons, shallots, garlic and a mixture of salt and sugar.
