Traditional desserts still reign supreme

Although many modern chefs prepare creative desserts with unexpected ingredients, classic puddings, pies and cakes remain the most popular sweets at most dining establishments. A new book by Claire Clark, who is head pastry chef of The French Laundry in Yountville, Calif., titled "Indulge: 100 Perfect Desserts," includes recipes that will make both English and U.S. diners feel at home.
