U.S. study reports concerns about foodservice oils

A study by a U.S. university of extra virgin olive oil sold to the foodservice sector reports that some samples passed approved chemical tests but failed sensory standards and additional chemical tests. The report illustrates that institutional buyers "need to use better tests," said Dan Flynn, director of the University of California at Davis Olive Center.
