Survey: Nutrition education helps food-bank users eat healthier

Survey data from a California program that provides nutrition education to low-income residents who use a food bank found that 46% of people in an intervention group used the help to prepare more vegetables, compared with 10% of a control group that did not get the assistance. The intervention group also was more likely to ensure their family ate foods in all five food groups daily. "Providing fresh fruits and vegetables is just one part of the equation. You also have to make sure people know why they should be eating it and different ways to prepare it," said registered dietitian Janet Leader of Second Harvest Food Bank.
