Md. district expands access to gluten-free options

School nutrition professionals in a middle school in Maryland are doing more to provide students with access to gluten-free food options, such as gluten-free rice. The school also is taking steps to make it easier for students to identify such foods by designating a gluten-free section in the food line. The district may implement a similar strategy in other schools.
