Cafe Boulud chef sticks to classic dishes

Executive chef of Cafe Boulud Gavin Kaysen pays tribute to his mentor and boss, Daniel Boulud, by ensuring the menu reflects the restaurant's beginnings with French-inspired dishes such as striped bass en paupitte. "[The restaurant] was built in 1900 by [Boulud's] great grandparents and there's a lot of history to it," Kaysen said. "And every time we come up with new dishes and new ideas, sometimes we like to revert to the classics and remember what that's about."
