Farm-to-table program challenges CIA students to focus on local ingredients

The CIA offers a farm-to-table program at its in St. Helena, Calif., campus in which students create multi-course dinners after harvesting pounds of produce from the school's neighboring garden. "You have to become flexible and write menus based on ingredients, not recipes," said professor and chef Larry Forgione. "The whole idea is more work and more consuming."
