Snacks made with "other flours," such as beans, rice, pulses and vegetables, are gaining popularity and are expected to grow at a compound annual rate of 4.3% from 2012 to 2017, though flour still dominates, according to Euromonitor. "I don't think there is one single ingredient that is head and shoulders above the rest, though it is really the positioning and the very 'difference' of these snacks that is driving demand," analyst Cathy Boyle said.
