Chef explores variations of classic Mexican dishes

CIA graduate and James Beard Award semi-finalist Daniel Marquez introduces his diners at his Zacatecas Tacos & Tequila restaurant in Albuquerque, N.M., to authentic Mexican and Southwestern food with epicurean versions of dishes they are already familiar with, such as tacos and enchiladas. "I love taking classic combinations and elevating them, with a twist, whether it be through a technique or change in ingredients. It's exciting, and always challenging to create food that will leave people asking for more but that are true to where I come from," he said.
