Maryland pilots raw-cheese production at some farms

Eric and Holly Foster concocted Maryland's first legal batch of raw milk cheese at the Fosters' Chapel's Country Creamery in Easton last week. This comes after the state is letting several dairy farms produce raw milk cheese aged at least 60 days, which mimics pasteurization. The Fosters are hoping that they will be able to sell blue cheese for $22 a pound in three months.
