Chefs surveyed overwhelmingly chose on-site gardens as the hottest restaurant trend of 2010, with more independent eateries opting to grow their own local produce. Owners of the Blue Water Grill in Grand Rapids, Mich., tripled the size of their garden this year, adding new lines of produce and creating a draw with garden tours for guests interested in learning more about the origins of their meals.
