Flexible white chocolate flavoring gives manufacturers new options

U.K.-based TasteTech has designed a white chocolate flavor that gives manufacturers control over when the flavoring is released. An invisible microfilm of vegetable oil surrounds the white chocolate, according to the company. The control-released technology allows the flavor to be released during cooking, eating or a change in pH.
