Marriott tailors fast-casual concept to busy travelers

Marriott grew concerned a few years ago that its breakfast buffet wasn't serving the frequent business travelers at its Courtyard properties, many of whom were grabbing breakfast to go outside the hotel. The chain created Bistro, a fast-casual concept with a loungelike atmosphere that offers guests a place to grab breakfast on the go or congregate for longer meals or drinks throughout the day. "There's a lot of foot traffic. There's a lot of folks hanging out. It's very similar to a Starbucks, with people interacting all day long," said the chain's food and beverage director.
