Chef Achatz talks food trends

The Internet has "changed the way chefs kind of gather information and look for inspiration," said Chicago's Grant Achatz, who said he strives to remain original while also keeping track of what other top chefs are doing. In a lengthy interview, he also said he wants to open a food truck with his new restaurant, Next, but Chicago is "handcuffing us."
