British entrepreneur brings chocolate making in-house

Small-scale bean-to-bar chocolate producers, which buy cocoa and process it from scratch, have mainly been concentrated in the U.S., but Duffy Sheardown, former race car engineer-turned-chocolate producer, is spearheading the movement in the U.K. Sheardown's production, Red Star, is still small, producing only 600 bars a week, and he buys from suppliers in Panama, Ecuador and Honduras.
