Non-celiac consumers still flock to gluten-free

About two-thirds of consumers who purchase gluten-free products do so because they perceive gluten-free foods to be healthier, while just over a quarter buy them to lose weight, according to a survey from Mintel. No scientific evidence supports either belief, but consumption of gluten-free products has still managed to increase 44% over the last two years, making it a more-than $10 billion industry.
