Deep-frying wins out in Atlanta's chicken eateries

Virtually every Atlanta restaurant known for its fried chicken shuns the traditional pan-frying method in favor of deep-frying in hot oil, which is faster and easier. "Pan-fried tastes better, and we'd do it if we could," says Drew Buckner of Buckner's Family Restaurant in Jackson, Ga. "But we fry tons of chicken a year. We'd never keep up."
