Gluten-free goes upscale

Superstar chef Thomas Keller and his team are developing a gluten-free blend of rice flour and cornstarch that will be sold under the name Cup4Cup. Though the French Laundry menu won't be featuring gluten-free products, Keller joins a $2.6-billion-a-year industry buoyed by celebrities who have embraced gluten-free diets.
