Indian chefs feed U.S. demand for vegetarian meals

Indian cuisine has become a starting point for some U.S. eateries to create vegetarian menus with an international flair. At Red Lentil in Watertown, Mass., chef Pankaj Pradhan uses locally available produce to create seasonal vegetarian menus influenced by Indian and other cuisines including Moroccan, Mediterranean, Italian and Mexican.
