Arla Foods Ingredients, a manufacturer of egg replacers, is seeing increased demand for its egg white replacers from makers of gluten-free foods. Egg white replacers can be used to create foams that contribute to the stability and tenderness of baked goods at less cost than traditional egg whites. The gluten-free food and beverage market is expected to hit $10.5 billion in sales this year.
