What consumers look for in food labels

As consumers wait for trans-fat labels, which are due out Jan. 1, 2006, they are advised by nutritionists to carefully read food labels. The first step consumers are taking is searching for partially hydrogenated or hydrogenated oil. Another item consumers look for is the breakdown of fat content: total fat, saturated fat and monounsaturated fat.
