Food companies processed record numbers of peanuts in 2008

Peanut production in 2008 was the third-highest in history despite the national salmonella outbreak, an unusual occurrence given that a rebound from a food safety scare typically takes longer. "It shows you how important peanut butter is to the American diet," said Sanford Miller, senior fellow at the Joint Institute for Food Safety and Applied Nutrition at the University of Maryland. "People just won't give it up."
