Artisanal sausage is more popular than ever in the South where chefs serve up homemade versions and meat shops such as Cleaver & Co. in New Orleans teach home cooks how to make their own using pig and boar meat. "I assume a lot of people want to make their own so they know what they're putting in it," said salumiere Kris Doll. "And people cooking at home are a little more adventurous."
